We select aged 3 to 7 horses’ back leg which are growing in Mongolia grassland. Evisceration and segmentation are done by Chinese workers. The segmentation part is clear and block type is integrate, with removing bone, and evisceration of lymph, oil, and tendon. Located in the anterior acromion deltoid muscle of horse, it is large and compact, suitable for processing cooked meat products.
